Custard Raisins Sweet Bun

I love baking at night! Somehow just like studying, I perform the best at night~ =X I cant explain y~ If I have the whole day free to myself, I’ll end up sleeping *giggle* or doing random stuffs, but not studying! >.< I prefer baking at night, normally after dinner, say between 8pm – 10pm window period. XD y? I guess, after dinner I just dun wanna sit down! Baking allows me to stand n move ard abit in the kitchen. (^.^ v) the product of my hard work, will be ready for supper (if any1 feels hungry =p) and also will be fresh for breakfast the next day~

I had the whole day to myself today, since there’s no class, I woke up late =X need to recharge my battery! Been sleeping for less than 4hrs since the ubin trip… during our usual tue gym session, yunjie asked for cinnamon rolls. XD set me on track, back home, I took out my sweet bun recipe, knead my dough~ only to find that I’m out of brown sugar! >.< bye bye cinnamon roll… cleared my baking cabinet hoping to find some goodies! Found custard powder which I bought sometime back. Brings back memories… =/ decided to make something out of it! So tada! new creation… Custard raisin sweet bun! =X

The best thing abt baking is when u try out new recipe, mix and match recipes to form something u like or even come out with yr very own recipe. (^^,) and the best thing abt making bread, is that u just need to knead it, leave it to proof, and u can go off doing yr stuffs =p my bread proofed for a long long time! at least 4hrs and above, as i was at my cousin’s place fixing their comp. =X

They seriously smells good! after taking all these shots, mum n dad gobbled down more than 1/2 of the whole tray! hee~ take a look at the texture of the sweet bun folks!

 

Ingredients:

(A)
75g bread flour
75g cake flour
1tsp yeast
60g milk
½ egg
30g sugar
25g butter

(B)
1 tblsp Custard powder
½ tblsp Sugar
85g milk
10g butter
1 tsp vanilla extract

20g raisins

Glazing: ½ egg

Steps:

  1. Place all ingredients in (B) into a pan and stirring constantly bring to the boil gently.
  2. Remove from the heat. Leave to cool, place a piece of cling film onto the custard to prevent a layer of skin from forming.
  3. Mix all ingredients in (A) together to form a dough.
  4. Place the dough on a lightly floured surface; knead the dough until the dough is elastic, smooth and non-sticky. It will take about 25 mins to knead the dough by hand. (lazy me, let my mixer do all the work! *wink*)
  5. Place the dough in the oiled bowl and cover with cling wrap (to seal in the moisture), let it proof for 1 hour or till it doubles in size.
  6. Take out the dough and punch out the gas produced. Let the dough rest for about 15 minutes.
  7. Roll out the dough into an oblong shape; spread the Custard and raisins on it. Roll it out Swiss roll style and slice it into pieces, thickness according to your liking.
  8. Arrange them on a greased pan and let it proof for until double in size.
  9. Brush the top with the egg mixture.
  10. Bake for about 15 minutes in a preheated oven at 180 degC.

Homemade Pizza

As promised, I attempted to make pizza from scratch today (^^,) the process is similar to making bread~ =X similar ingredients (bread flour, yeast) and similar steps (knead and proof). I love making soft and fluffy bread, the ingredients are simple and easy, but it’s patience that is key! U need to wait… n wait… n wait… for yr bread to proof. =p was pondering if i should make a thin or pan crust~ after throwing a dice, i’m going for pan crust! XD will attempt on the thin crust recipe next week…

Made the all time family favorite, Hawaiian pizza! Simple toppings, cheese, ham and pineapples~ =) mummy bought fresh pineapple just for this! XD Suppose to meet aishi for dinner tonight, as she is doing her hair today with peter(my stylist) =p since i’m meeting her, i brought along my 1st batch of pizza to let them try~ my 1st guinea pigs… (^^,) they like it!I’m glad that both of them says it’s nice… MUHAHA.
Got the recipe from HHB‘s blog. simple ingredients for the dough, therefore i’m determine to give it a try~ i half the recipe to make 2 21cm pizza. (used my 21 cm tart tray =p)

Ingredients: (for 2 21cm pizza)

170g bread flour
2 tsp instant yeast
1/4 teaspoon salt
100ml lukewarm water
1 tbsp extra-virgin olive oil

Steps:

  1. Mix flour, salt and yeast in a mixing bowl. Make a well in the centre and add the water and olive oil. Mix with hand to form a soft dough. If needed, add a little more water.
  2. Turn dough out onto a lightly floured work surface and knead for 10 mins or until the dough becomes smooth and elastic. (I used my mixer with a dough hook =X however kneading your own dough is a fun process, just like playing with play doh =p)
  3. Place dough in a lightly greased bowl, cover with cling wrap and leave to rise for 1 ~ 1.5hrs until double in size.
  4. Turn out the risen dough onto a lightly floured work surface and knock it down to release the air. Give it a few gently kneading. Roll or press out to a round to fit the pizza tray, place dough on baking tray.
  5. Spread pizza sauce over the pizza base to within 1 cm (0.5 inch) of the edge. Arrange a layer of grated cheese, followed by preferred toppings. Sprinkle the top all over with grated cheese.
  6. Leave the pizza in a warm place for about 15mins. Preheat oven to 220degC (425 degF)
  7. Bake pizza for 20~25mins or until the crust has risen and is golden and the cheese has melted. Serve warm.

haha~ National day? NOOO! It’s JH’s bday! >.< to show how much the gang loves JunHONG, we are all in HONG today. (except Imran lah! who has no red top at home! but i mus give him credit! at least he came with a red coke can!) *evil laughter* see JH! WE LOVE YOU! *whisper* organize more outing for us in return hor!

To JH, Okie since it’s your bday, i mus thank you 1st! Thanks for all the activities u plan for us to help me pull thru the tough and rough times~ =D badminton, table tennis, swimming, squash, gym sessions! Thanks for being my “Shifu” in teaching me all the ball games XD hee, i’m really not good playing with balls! and of cos Ubin trip… which was very enjoyable. =) *big hug*

Somehow these shots reminds me of class photo =X those kind taken for the year book! *smack head* Old man JH = our lecturer and we are students in uniform. =p see see! Imran trying to camo behind me -.- we can still tell u are not in RED!

Drama of the year goes to “Old and New Love” Starring: Yani, ZY and JH. Yani “X”-ing away ZY! haha~ and happily ever after with her “4%” with ZY depressingly watching the couple, will there be revenge? stay tuned for the next episode! –>

Back tracking to the day b4, 23rd Nov 2007! We had a pre b.day celebration lunch at Siam Kitchen where we enjoyed Thai food~ =D yum yum~ haha~ Being the King of the day… Uncle hong got to sit right in the centre! guarded by the pair of twins~ =p me and yani, and coincidentally we are both in black that day~ O.o Serving him food and all~ But only valid for 23rd and 24th Nov. *evil laughter*

Not only did uncle hong get served n pampered during lunch, he even enjoy the privilege of being hugged by 4 girls at a time! wah~ where to find? *drool* Check out his face…

Of cos, everything comes with a price… there’s nothing free in the world~ =p like what syafiq says “For every up, there’s a down” haha~ so….. with evil people like ZY ard out for revenge *shake head* life aint that simple wor… But be thankful JH! u are blessed as well, we got u a mixed fruit cake with lil cream~ *giggle*

Potato Minced Meat Pie

I hate Saturday class!! *cries* Was in sch for the whole day, though my wonderful sat gone just like tat, i have not much complaints as hanging out with my dear gang = extremely fun~ *Grin* It’s JH’s bday today! *sayang* bday n he still has to be in sch… but he gets to hang out with me! *pose* tat’s a plus point already. Anyway i need to recharge my battery! For the last few days been getting only not more than 4hrs of rest. >.< I fell aslp in class today! well, a short nap for 15mins~ XD

Got home and realized that there’s no dinner for me! T.T Dad n mum munched on some light dinner thinking that their kids will not be home for dinner. Perfect excuse for me to make supper for them! yippee~ Used my last last backup energy to make this…

this is my 1st time using this pastry recipe, it’s more to shortcrust pastry, instead of the 1 i usually make (flaky puff pastry) as i’m so drained, i decided to make 1 big big pie, instead of 6 small ones as instructed in the recipe. As for the filling, i used my own recipe, hee~ my usual potato minced meat filling.. Cooked by “agar-ation”(estimation)

Ingredients: (21cm tart pan)

Pastry:
150 gm butter
250 gm plain flour
1 tsp sugar
1 egg yolk
A pinch of salt
100 gm yogurt

Fillings:
3 large potatoes (diced)
2 large Onions (diced)
150g minced meat (marinated)
Mixed Vegetable
Seasonings (salt, oyster sauce , pepper etc)

Steps:

  1. Mix flour, sugar, salt together in a mixing bowl.
  2. Rub butter into flour mixture until like breadcrumbs. (see pic Above)
  3. Add in yogurt and egg yolk, mix to a dough.
  4. Chill the dough for at least 30mins as it will be very soft and hard to handle. (for easy handling, i split the dough into 2 portion. Place a portion between 2 cling wraps and shape them with a rolling pin into a flat round sheet before chilling.)
  5. Prepare the fillings. (I usually steam the potatoes 1st before stir fry-ing with the rest of the ingredients, easier and shorten cooking time =p)
  6. Spread 1 portion of the chilled dough sheet on the base of the pan. Poke holes on it with a fork.
  7. Top up the pie with fillings.
  8. Spread the other portion of the dough sheet on top. I pressed the edges with the back of a fork, poke holes on the top and did some deco with the remaining dough like HHB. XD
  9. Brush the top of the pie with egg white.
  10. Baked at 180 degree C for 25-30mins (till golden brown)

Ubin Trip 20th Nov 2007

My palms hurts…. my butt and shoulder aches…. i’m sweaty, sticky, wet and dirty… >.< but i’m so enjoying it! n i cant get enough of it, i wan more n i dun wan it to end! XD I LOVE UBIN~ (^.^v) Pulau Ubin is so so so fun! ./hop ard. yea~~ i’m so glad and thankful that JH organized this outing. ./hug JH. hee~ though my butt aches, n i can sit properly now~ (every few mins, i got to shift my butt >.<) i love the nature! i so enjoy strolling along the beach, smell the sea, feel the sand, enjoy the breeze…. else trekking XD i love to walk! look at trees, flowers, animals blah blah~ erm… how come i love cheapo activities huh? ./ponder. hee~ i love camping and picnics too! ohh~ n it has been a long time since i fly kite! come on people… let’s make one! (^^,)

It’s my virgin trip to Ubin =/ Mr M says i should have gone to Kusu island (“Tortoise Island”) instead cos i’m such a mountain tortoise~ (-_-“) since it’s mine and Agus’s 1st trip to Ubin, we took pics with the “Welcome to Pulau Ubin” Sign with the gang~ ./giggle. we are tourist! and we come from Singapore. XD

And yes~ my new haircut! Peter(my stylist for close to 4yrs) Chopped off my fringe, and gave me bangs! =X left side of my head with the normal layering while right side with steps. =X something new though~ i never had bang fringe b4 and a not standard haircut =p my dear yani even ask if i was been conned. “yr stylist forgot to cut the other side issit?” LOL. ./clap. good 1 yani-chan! But i’m starting to love it! self-denial? who noes? XD

After some bargaining, selecting and testing of bikes, we finally settled with 8bucks rental per bike for the whole day! gosh! cheap right? where to find rates like this in SG! ./smack head. 1st stop… we headed off to Chek jawa! We climbed up this tall tall viewing tower which oversees Chek jawa beach~ ./pant.

n suddenly all hyper (-_-“) with all their jumping shots… i’m glad that the tower survived their rampage! Amen! i really wanna get home in 1 whole piece n not smashed! =p

I really mus say that we are blessed! =D the weather was rather good, windy and all. Though it started to rain later in the afternoon, when it started, we are really close to one of the shelter therefore we didnt really get drenched and most importantly we covered those rather muddy areas ./grin. we continued on after the rain reduced to drizzles… ohh~side track! wild boars are scary creatures -.- they just came dashing through!! initially i thought my dear evil twin, yani cycled off the track n into the bushes! ./giggle. come on! the commotion was so big~ it seems like a human being mah~ =X

We are really a group of adventurous people! ./smack head. we crawl under a broken fence into a quarry, just so tat we can take pics =X But it’s so worth it! look! so nice~ ./dreamy eyes.

Been a long long time since i cycled~ =X kind of newbie ah~ seriously, it’s my 1st time playing with bikes with so many gears! >.< those kind i ride are either gearless or just with simple gears 1-3 max. But this bike… erm… u can play with gears on the left and the right side on the handle. =X Chim! but my shifu, uncle hong taught me well… by the 2nd 1/2 of the day, i am able to play with the gears rather well! ./pose. pro-ster! =p 1st 1/2 of the day, i spend most of my time pushing myself n my bike up those steep slopes. ./blush. aiya~ learning! =D

By the end of the day, every1 complaining tat their butt hurts! my palms hurts due to too much gripping of the handle. My shoulder aches as well >.< sotong me, close to the end of the day, i still have 1.5L of water in my backpack! carrying it ard for the whole day =/ We are all hungry, dirty, wet and smelly! ./pinch nose. Changing into a new set of clothings only makes me look cleaner but not smell better! =X Hee~ but i love Ubin! =D any1 keen to go again? ./wink. okie~ let’s end with a pic of the “cool” guys. XD

Oreo Muffins

Been out whole day with mama, and was telling her abt my plans to make pizza or chicken pie or char siew pao on sunday for the family. (^^,) mama was very excited… and she claims to be happy that i’m baking again. Guess it shows that i’m recovering well? =p As she was more keen on pizza, we make our way to the supermarket where she happily pick the different kind of toppings required. XD seriously, i was more keen to try out the chicken pie recipe, so i bought the ingredients needed as well. Bought some baking needs as well and Mama paid for all them today~ =X i’m so thankful for that~ *whisper* (should have bought the mini donut tray, pullman tin, and the cake ring which i was eye-ing on for so long!) *smack head*

hee~ back on track, i have been using this plain muffins recipe for quite some time, tested and proven! Gt the recipe from hut of Cranberry , added oreo cookies to it this time. =)

 

Ingredients:
220g Plain Flour
1 tsp baking soda
80g castor sugar
1 egg
80g corn oil
250ml plain yogurt
125ml milk
1 tsp vanilla essence
6 pieces Oreo cookie (chopped)
Toppings (optional)

Steps:

  1. Preheat oven to 180 deg C.
  2. Sieve flour and baking soda together in a mixing bowl. Add in sugar and chopped oreo cookies and mix well. Make a well in the centre. Set aside.
  3. In another bowl, beat egg lightly with a fork, stir in vanilla essence, yogurt, milk and oil. Pour all at once into the well in the flour mixture.
  4. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy.
  5. Fill the muffins cups with the batter (not more than 3/4 full). Add toppings
  6. Bake for about 20-25mins or until a skewer inserted into the centre of a muffin comes out clean.

* Bear in mind, do not keep mixing, stiring or beating the batter, just a quick mix.

Brownies!

Made some brownies for bro to give to his fren tml~ =p wat kind of fren? well… u know~ the way he says “my fren likes yr brownies” haha~ then, i’ll go “which fren? colleague ah?” XD in shy voice, he replied “girlfriend lah” haha~ super cute~ just like me! =X anyway~ this brownies recipe, is unlike the traditional one served with ice-cream. Those kind are rocky like~ while this 1 is more to the cakey side… but however not too cakey. therefore can be taken on it’s own. =) but of cos if taken with some ice-cream + banana + hot fudge = HEAVENLY! the thought of it makes me drool~ ./drool.



 

Ingredients:
80g Butter
100g Sugar (i like it bittersweet, do feel free to increase it to your liking. original recipe calls for 200g of sugar)
2 Eggs
60g Plain Flour
30g Cocoa Powder
60g Chopped Walnuts
1 tsp Vanilla Essence
1/4 tsp Baking Powder
Some nuts for Toppings (optional)

Steps:
1. Preheat Oven to 175 Degree C. Grease baking pan.
2. Beat Butter, sugar and vanilla essence till light and creamy.
3. Add in eggs 1 at a time.
4. Sift in plain flour, cocoa powder, baking powder gradually into the mixture.
5. Add in walnuts, mix till well combined. Pour mixture into greased pan.
6. Bake for 20 – 25mins
