Brownies III – Bloomin’ brilliant brownies

January 31, 2008

Bloomin’ Brilliant Brownies for Bloomin’ Brilliant Beauty!! *grin* Yup~ so who is this beauty? None other than… *drum roll* Jamie!! Another January babe!! ❤ all the January babies!! Okie, pure biasness *cover mouth* Been cracking my lil head on what to make for her, made cookies for her the 1st time I met her, so X-ing cookies out! Need to be sometime different! Chocolate cake? All the cream and stuffs, I doubt it will last till my greedy master meets her! =/ He will most prolly make up a reason like, “the cake is going out of shape!” and start gobbling it up. XD

Need something that will last and able to store up to a few days!! I’m sure she will be dining out for a couple of days in a row. Something she can munch on and not too heavy. After some hunting, my virtual best fren (Mr. Google) pops up this brownies recipe by Jamie Oliver! *giggle* Jamie for Jamie! 😀 What is this!! Signs for above!! okie dokie then~ i choose u, Bloomin’ brilliant brownies! *throw pokemon ball* Simple things can be great too yea? XD Made some Fudge to go along with the brownies as well, Just for Jamie! More Js. *grin* Made some for Master San to share with his colleagues as well~ XD San, i’m afraid u will chomp out my special gift for her! therefore…. prevention is better than cure! *giggle*

Jamie: 100% Dark chocolate! from brownies to fudge! less sugar = less fattening, plus it’s your everything u eat = 0 calories! Sorry babe, Ice-cream not inclusive~ =X Was so close to making you so homemade ice-cream, but melted ice-cream won’t taste yummy! 😛

Happy girl! (^^,) U WILL be blessed with everything! *nod* More than anything imaginable! 😀

Recipe taken from Jamie Oliver’s Little Book Of Big Treats.

250g unsalted butter (reduced to 150g)
200g dark chocolate
50g chopped walnuts
80g cocoa powder, sifted
65g plain flour, sifted
1 teaspoon baking powder
360g caster sugar (Reduced to 160g)
4 eggs

  1. Preheat oven to 180 Degrees C. Grease Baking pan.
  2. Melt the butter and dark chocolate over a double boiler and mix until smooth.
  3. Add chopped walnuts and stir together.
  4. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, and then add this to the chocolate mixture.
  5. Beat in the eggs and mix in until you have a silky consistency.
  6. Pour your brownie mixture into the baking tray, bake for around 25 minutes.

You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out all clean. The brownies should be slightly springy on the outside but still gooey in the middle. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares.

Smells great! From the looks and chocolate-y scent i sense that it’ll definitely be a lot richer in taste compared to the 1st brownies recipe. But lacks the crispy crust of the 2nd brownies. 3 brownies recipes so far… more to come! Didn’t get to taste it as it’s a gift! It seems like, i am sending out food without ever trying them myself nowadays =/ brave yea! *fingers crossed* Let’s wait for comments from Jamie, San and his colleagues. XD

Fruit Pastry

January 31, 2008

Yup~ I know the craze is all over~ >.< the Fruit Pastry craze started in Jun 2007? Lot of forum babes posted pictures of their beautiful bakes of this recipe. Today was the “perfect” time to try it out~ =X Thursday = the day I make freshly baked goodies for the folks that practice Qi Gong with mummy. (^^,) Yani once asked me, “your mama trying to “promote” you? Who knows one of the folks have a single and available son and can match make you guys up!” *yawn* how true yani!! let’s see! *rub chin* okie, another one of my nonsense! XD haha~

Did a trial run of this recipe yesterday~ =X overall, i’m not happy with the results! =/ 1stly I over-baked it… was multitasking and therefore not really paying full attention on it! >.< 2ndly, didn’t realized that the rack was being lower to the lowest rack which resulted in too much browning on the base! it turns out kind of dry~ NOT GOOD!! 3rdly, I used canned apricots and they dun taste good at all~ kind of to the sour side. After baking the sour-ish taste got ever stronger… *sulky face* never say die attitude, i am still determine to give this recipe a try this morning! The problem sure lies with me for sure >.< since the other forum babes loves it so much, it mus be good! *YOSH* Crawl out of bed at 5.30am to make it again~ (i slept at close to 3am! eeeks! i need the bed! T.T let’s all hope i get a good night rest after gym :D) This time round, i sprinkle some sugar over the sour apricots before baking. Balanced out the taste ^^ love the refreshing scent of the fruits and orange zest~ *jump around* now i’m ready to impress! *grin*

210g Plain flour
200g sugar + 2 tablespoons (reduced to 120g, the elders like it not too sweet! XD)
100g butter
2 tablespoons sour cream
1 tsp baking powder
1 tsp vanilla Essence
1 tsp orange zest
3 eggs
500g fruits (apricots, peaches, pears, cherries, plums, orange, pineapple, or any other fruit not to juicy)

  1. In a strainer, place the prepared fruits (pit removed and cut in not too big pieces) sprinkle them with 2 tablespoons of sugar.
  2. Preheat oven to 180 C, Greased the baking pan.
  3. Beat butter, sour cream and sugar together.
  4. Add eggs one at a time.
  5. Add in Vanilla essence and orange zest.
  6. Finally add in Flour and baking powder. Mix until everything is smooth.
  7. Pour the mixture into baking pan, place fruits on top (do not press them into the batter)
  8. Bake for 60-70 minutes or till an inserted skewer comes out clean.
  9. Let cool on a wire rack and sprinkle with sugar and serve.

Refreshing and delicious!! I guess I’m having too much chocolate recently~ my taste buds are craving for something not too rich and sweet. This fruit pastry fits in just too well! 😀 not too sweet, light and moist~ ❤ YUMMILIOUS!
As you can see, i used mainly canned fruits(peach, apricot, rambutans), will try fresh fruits next time round!

Double Chocolate Cookies II

January 29, 2008

Yup, another Double Chocolate Cookies recipe I tried out~ 😀 what to do? people around me loves Chocolate!!! *space out* when my mum sees me pull out the chocolate, she goes “again?” *giggle* somehow, I’m starting to appreciate chocolate =X ❤ Dark chocolate! Geez, I love the more expensive chocolate =/ Time to hit Chocolate buffet at Fullerton? Nah!! After I lose a few pounds… MUHAHAHA! Which I doubt will happen if I continue to bake n eat at this rate >.< *boooooo*

This is from Donna Hay’s mag! (^^,) Simple Essentials: Chocolate *drum rolls* Why am I making these today? *grin* it’s my evil twin’s sister, Suhailah’s tml! =D I remember she enjoys the double chocolate cookies I made previously, since I have this new recipe on hand, I decided to give it a try!Hee~ something for her sweet 18th 🙂 There is this Chinese idiom,

ài wū jí wū

1. to love for a person extends even to the crows on its roof
2. love me ,love my dog.
3. love one thing on account of another.

*giggle* yes, I love my twin and everyone around her! =) Definitely love Suhailah too! She is such a nice genuine girl~ Honest, Shy and sweet! Suhailah, I rem. The 1st time I met u, u are frying chicken wings for me! *giggle* Though u are kind of shy, the warm smile u gave was so inviting! More inviting then the chicken wings!! *big smile* I pray you have a good day in school! I heard u have a paper on yr day! T.T u will do well for your paper!i’m sure! 😀 I hope when u received the gifts, you could still make out the secret message on the cookies *cover mouth* in case u cant! here it is… 😛

Happy Sweet Beautiful 18th! Stay Young, Happy and Healthy Girl! ❤

100g unsalted butter
130g brown sugar (reduced to 70g)
1 egg
1 tsp vanilla extract
150g plain flour
30g cocoa powder
1 tsp baking soda
120g dark chocolate, melted
280g dark chocolate, chopped (reduced to 150g)

  1. Preheat oven to 160 Degrees C.
  2. Cream butter and sugar till light and creamy.
  3. Add the egg and vanilla and beat for a further 3-4 minutes.
  4. Mix in flour, cocoa, baking soda, and melted chocolate. Till it’s well combined.
  5. Add the extra chopped chocolate and stir to combine.
  6. Shape cookies accordingly, I Spoon a tablespoon amount, roll them into balls and flatten.
  7. Place on baking trays lined with non-stick baking paper, allowing room for the cookies to spread.
  8. Bake for 10-12 min or until slight cracks have formed. Cool on wire racks before storing in air tight containers.

Unlike the previous Double chocolate cookies, this uses only Dark Chocolate! Therefore the taste is richer. Reduced the dark chocolate amount as I find that the stated amt seems too much =X But still I can taste the oozing chocolate in each bite. (^^,) Erm… As i dont fancy stuffs that are too sweet, i’m okie with it, but not really sure if the sweetness level is alright for her. *smack head* should not have reduced the sugar by so much!

Thank You!! (^^,)

January 28, 2008

1st of all… Many thanks to Daddy God for making all things possible, and all things good! (^^,) of cos not forgetting my precious frens and family 😀 This post is waaaaaaaaaaayyyyyyyyy overdue! =X I’m so sorry, been very buzy with lots of stuffs, and a special thank you post is not something I can compose in a short time. 😛 Must be sincere right! *grin* I missed out a lot of posting as well, a few xmas gathering events etc. =X But good things are worth the wait yea?

Somehow I’m really blessed this year! 😀 it took me awhile to see it, but I’m glad that I finally did~ Revelations! AMEN! When Daddy God shuts a door to something; it only means He is protecting me! Protecting his precious daughter from all the dangers out there behind the closed door. *nod* He loves me too deeply to see me hurt, let alone getting more hurt. The end of something is not always a bad thing, it might be good, as it brings forth a new beginning… and now I’m sure and certain that, the end of the 2007, bring forth a brand new beginning. Whatever I’m going through, I’m never alone, I have my family always there to support me, daddy who really loves me that he hug and teared with me during the times which I cry myself to bed. Mummy who really cares, and showered me with attention and love more than I can ever want, bro who is kind and understanding enough to not “step on my tail” and listen to me pour out my heart, see his strong sister cry in front of him. =) Don’t get me wrong, my family is strongly knitted ever since young, but it’s now that I know we are more than strongly knitted, we are UNBREAKABLE! XD

Not only my family, I have my frens, all out there, loving me, picking me up ❤ Frens who pay extra attention on me, buying me cute gifts to cheer me up (yes! Special thanks to Master San (weicyan) ❤ for the cute pig pig u got me! I know It’s a surprise gift just to cheer me up! though my expression when I received it was not very happening, deep inside I really like it! I enjoy looking at it so much. U know lah, at that very moment I’m still not very myself.), writing/drawing me cute sketches and cards (Thanks “ah pa” (Lawrence) for all the cute drawings and cards to bright up my day in class =p) , spending time with me to keep my mind occupied! (every1 of my frens!! You know who u are!)

And also most importantly, God whom never forsaken me even when I was so angry with Him, and even doubted His presences and His love for me. I remember the nights I spend blaming God for being unfair to me, hating God. But no matter what, it’s Him, who answers my cries, when I ask for His presences to walk with and in me, walk me through again. Extreme leh~ but God never left me, He is always with me, waiting for me to ask for His help, strength again. It’s Beautiful when God speaks. He shows me verses in the bible as I flip, telling me that He is indeed here with me all the time! =X I always thought I will never love again! >.< Geez! LOVE HURTS!! Esp when u love the wrong person! =/ But soon after I’m in Love again =p Praise the Lord! How to not love a love so great? How to not recover and concentrate on loving Daddy God and His darling Son?

It’s a lovely feeling to know that some1 loves you so much to cry for you, so much so deeply… I’m sorry to break daddy and mummy’s heart at that time~ =( and also, not forgetting my dearest twin, Yani. 🙂 God, I’m so glad to have her!! Haha~ I remember clearly the 1st time she hug me and cry with me which was in Oct 2006 >.< 1st big fight with Tofu, I was “dying”, and the 2nd time in Oct 2007, Final big fight with Tofu, and I was “dead”. She is always there to hug me, cry with me, dry OUR tears together. *hug* I love you twin! Hee~ okie, FJJ! I know u are jealous now! But u know I love you too~ I will never forget how much you love me 😛 so deeply that you cry for me, knowing that I might lost my vision 5years ago! True frenship ❤ I got cornea infection, and there was an ulcer growing in my cornea (DAMN, all cos of contact lens -.- ) nearly went blind! According to doctor at the A & E department in the hospital lah~ =p need to wake up every hour to drip 2 antibiotics hourly!! YES every hour! For close to 2 weeks, before the ulcer totally healed N Thank God it didn’t grow bigger =X there are times where i really felt like giving up, dun drip, it’s so painful dripping it T.T and I cant get a good rest at all, but FJJ calls me every hour to check on me 🙂

Seriously, I enjoy my birthday this year a lot!! *jump with joy* it seems that I’m getting lots of surprises and gifts, which I really like or I wished I had or I need! *grin* never had I enjoy my birthday as much in the previous years! =/ I was “ill-treated” for 2 years and God indeed restores them for me yea? =p I get double portion this year! ❤

Hee~ Celebration for my started as early as 10th Jan =X Haha~ 1st up, Cui ling! Lovely~ a fren I never lost since poly days~ 😀 meet up every year at least once =X but I’m sure in this new 2008, more will come!! Since till now I met her twice already *giggle* Thanks for the wonderful company + dinner + gifts! ❤ Was seriously planning to get a new gym towel (I’m using an ugly dove towel, my partner Yunjie sees it every week during gym-ing =p) and tada! Now I have a new 1! ❤

Nice sweet twin, spend the eve with me! *giggle* we both went to pamper ourselves, with a Pedicure session :p after which she tired Hainanese chicken rice for the 1st time! *clap* Ask me if you wanna know where to try this yummy HALAL certified Hainanese chicken rice *grin* I’m ½ Muslim too! *laugh* Spend the very 1st min of my day with aishi~ *giggle* watching stars! Haha~ kawaii girl went jogging with me, and after which we lie on the pavement to just watch and enjoy the shining stars, chit chatting, and actually at 12am, she sang me a song~ LOL. Thanks silly girl! I love you! I know u hate jogging, but u still come along just to accompany me!

Nice Marcus treated me to lunch before Arrow Service on the day itself! (^^,) Thanks boy! Ok, no pics on the food! Totally didn’t expect him to know that it was my day! So didn’t bring cam cam~ =p And see what he got me! ❤ Lovely yea? *bigger Grin* Arrow was great, spoke a lot to God, it’s important that I spend my day with God too! 😛

Lovely Dinner with Family at night~ ❤ as I requested, Mummy cooked Claypot Fishhead! The last time she did it was like 6years ago? Very very long… so I requested for it, very yummy! ❤ fish head + big chunks of fish fillets coated and deep fried 1st, den stewed together with lot of vegs (cabbage, carrots, tomatos, broccoli, yam etc), tofus, dried beancurd, pork *drool* it’s like all in 1 pot!! ❤ Mummy’s cooking!

Met my dearest sister(serene) n Partner(Yunjie) later that night~ (^^,) Chilled out at the usual punggol park Bliss restaurant, the 1 we always meet up to complaint or share our joy with. Lovely time spend with these 2 darling girls! My Secondary sch precious! And I must so show this off!!! Look at what yun made for me! Yes AN APRON! Hee~ now I feel so chef-y. For me and me alone! Sewed by her! Designed by her! In my fav color as well! ❤ ahhhhh~ so touched! My heart felt so warmth up, when I see it! Thanks partner! I love it a lot!

And somehow, serene, must have heard that I have all the big big baggies XD and no small size bags! Every Monday, I will head to SPCA with my big big bag, even when there is only a few items in it. =X Sweet her, got me a small sling bag, just nice for me to put my barangs! *grin*

While doing spring clean I found this! Haha~ it’s 10 years old! A gift for both of them 10 years ago! I’m old! T.T noooooooooo

The next day, more surprises! As it was a Sunday, went for early service, then met aishi for a guitar ensemble performance at the esplanade. Lovely music pieces and I’m jumping with joy already! 😀 In the evening, together with aishi meet My dear master san, weicyan! A Chocolately-Cheezy Affair… (ACCA)

January 27, 2008

*giggle* This was definitely not what I initial plan to bake! =X Am gonna meet Cui Ling for dinner and shopping at vivo after service on Sunday. Ohh and her birthday is around the corner, decided to make her an advanced Birthday cake! ❤ Since I’ll b going for service b4 meeting her, I decided to go cream-less and ganche-less. =X After much consideration, I decided on Dark Chocolate Brownies bars as my gift for her sweet 24th! 😛 Planning to make those chewy bar kind, which will stay in shape and not go bad too soon. =X

Went groceries shopping at the mall yesterday evening, my poor fridge out of vegetables! *cover mouth* yes, >.< totally out, no greens at all and no eggs! I simply can’t live without greens~ =X so off I go to buy some greens to prepare for dinner, at the same time, pick up some baking ingredients(butter, dark chocolate). =D while shopping for ingredients at the mall, Aishi commented about baking cheesecake again. It struck me and set me thinking! I’m sure Cui Ling loves cheesecakes too~ =X somehow, I always conclude, that people whom I enjoy hanging out with will have similar liking as me! 😛

I’m seriously trying to be adventurous! *gasp* This recipe, I can totally call it MINE! 😛 i just added ingredients according to my gut feeling. *evil laughter* I wonder what got into me, well, I wanted to make her something special, so a recipe I made!! And she will be the 1st to try it~ a creation and a recipe just for her! (^^,) bought sour cream to eat with baked potatoes =X but as I was making this, I realized tat I do not have enuff fresh milk *Pull Hair* and the batter seems too think and hard! Like a dough~ Though i want it result to be bar-like, i definitely do not want it too cookie like! soooooo I added sour cream~ XD no harm yea? Both comes from cow anyway~ *moooooo* =X

To Cui Ling: Girl, I’m sorry if it taste terrible =X blame your dear friend for trying so hard to please u. 😛
Happy Advanced 24th Birthday girl! (^.^v) Many blessings will be showered over you!

Peanut Oat Cookies

January 24, 2008

Whee~ *clap* it was an exciting + enjoyable day today~ 😀 when over to Adela’s place this morning~ 😛 To enjoy each others company, share the love for baking and also bake some for CG mates. 😀 Super blessed day! Things just falls into place with His guidance~ =) we managed to make 2 types of cookies, and ½ of the time it was based on “agaration”, adding ingredients based on our instincts and gut feelings, ah… Holy Spirits working wonders I guess! Cookies turn out great! With pretty good reviews from Adela’s aunt and granny too~ (^^,)

Ohh check it out~ 😀 it’s my 1st time seeing this! Crisco Butter Flavor shortening! and it comes in Large size! The normal 1 i see are those small size ones which are flavorless and white in color. =X so cool! This girl practically has everything stocked up in the house ready for baking! I’m shocked by the amount of muffins cups available. XD

1st up, Peanut Oat Cookies sandwiched with nutella spread! XD It is so not called for! Nutella spread was a last min addition. *cover mouth* According to Adela, Plain peanut oat cookies, taste too wholesome! *giggle* I guess it is cause of the oat and oso the reduction of sugar, which makes it more to the wholesome plain side. :p Adela is another CHOCOLATE LOVING girl! *gasp* She pulls out 2 bottle of Nutella spread, and off we go sandwiching and munching the cookies as we spread. *giggle* with the spread, it balances off the taste of the cookies with slight chocolate-y sweetness. It simply tastes delicious! *lick Lips* Recipe taken from QBB site, but we did a couple of modifications to it, added milk as our dough turns out too dry and crumbly at 1st =X

300g plain flour
60g quick cooking oats
100g chunky peanut butter
50g honey
100g QBB Pure Ghee (We replaced it with Shortening)
¼ tsp salt
120g caster sugar (reduced sugar to 60g, it taste just right for our taste buds =p)

1. Cream QBB Pure Ghee with honey, peanut butter, sugar and salt until smooth and creamy.

2. Fold in flour and oats and mix until well combined. Roll out dough to 4 mm thickness and cut with a floured fluted cutter.

3. Place cut out dough onto greased trays. Brush lightly with beaten egg and sprinkle with some oats.

4. Bake in preheated 170 Degrees C oven for 15 minutes or until golden brown.

5. Remove cookies onto a wire rack to cool before storing in airtight containers.

Yummy, packed with oat and peanuts, therefore it is more to the crunchy hard side, but with the nutella spread, it makes a world of difference! *lick lips* Looking for some wholesome goodness? Try this! 😀
